KATHI'S MOJITO!
This is a lot of work but worth it! I am famous for this recipe and make it every Kentucky Derby...and of course on HOT Florida Summer evenings! Enjoy!
3+ fresh mint sprigs
3 drops of Angostura Bitters
2 tsp raw sugar (NOT Simple Syrup)
½ tsp lime zest
3 tbsp fresh lime juice
1-½ oz light rum (the BEST is Cruzan Estate Light Rum)
Club soda (or seltzer), chilled
Ice
In a tall glass (12+ oz.), crush half of the mint leaves in the bottom of the glass. Add the bitters, sugar, lime zest, and lime juice and stir thoroughly. Add rum and mix. Top off with part of club soda. STIR. Add ice; top with club soda and STIR well again. Add a sprig of mint, and serve with a straw. Of course I use a recyclable straw...you need a straw to access the yummy sugar at the bottom!
